Black Truffle Season

Nothing says haute cuisine quite like the hideously ugly and oh-so-delicious black truffle. Which is why we in Perth are so lucky that we’ve got the black beauties growing right in our back yard.
Manjimup’s black truffle season has just begun, so it’s little wonder black truffle degustation menus have been popping up around town. Here are some of the standouts:
Chef Alan Desouza has created a four-course degustation menu that is full of rich, earthy flavours that complement the hero of the night: the truffle. The meal includes a Honey Goat Cheese Pannacotta, Pig’s Trotters with Truffle and Sweetbread, Beef Wellington with Truffle Buttered Baby Vegetables and a dessert of Truffled Tapioca with Fig French Toast. For a little extra, you can have each course paired with wine and partake in 1907’s infamous cheese trolley. You go to 1907 to indulge, so why hold back?
Burswood restaurant Nobu is one of the world’s most recognised Japanese restaurants with locations in 21 cities around the world. To celebrate black truffle season, Chef de Cuisine Nicolas Mazier has created a one-of-a-kind omakase menu (that’s Japanese for degustation). Dishes include Seared Trout Dry Miso, Artichokes and Black Truffles, Pan Seared Scallops and Black Truffle Snow and Wagyu Steak with Yuzu Black Truffle Teriyaki.
Truffles have always played an important role in Italian cuisine, so it wasn’t too much of a stretch for Modo Mio’s Head Chef Giampaolo Maffini to create a collection of authentic Italian dishes that champion the ingredient. Homemade Tagliatelle with Black Truffle and Pan-fried Veal Medallion with Brown Butter and Sage, Quail Egg, Grilled Polenta and Sautéed Spinach and Black Truffle are just a few.
