Chocolatier. What a great name for a career. We want it.
Rebecca Knights-Kerswell is lucky enough to be a chocolatier and the genius working behind the cauldron at Coco Chocolate. She’s a local Sydney gal who studied chocolatiering in Edinburgh, and even ran a store there, before returning back home to spread her love of chocolate all over the lower north shore.
Her goal is simple: to advocate organic farming, ethical trading and use non GM ingredients. Oh, and to produce some of the best damn chocolate in Australia. Easy.
If you haven’t been there already you just don’t know chocolate. Try the Organic Dark Chocolate with Pink Peppercorn and Nutmeg, or Organic White Chocolate with Rose and Bergamot. They’re created in Rebecca’s Mosman Willy Wonker style studio where she beats the chocolate when it’s naughty, or as they call it in the trade, ‘hand tempers’.
While Christmas featured delicious offerings of gold, frankincense and myrrh chocolate, it’s now all about heart shaped, pure rose oil Valentine’s Day offerings.
